A food lead, passionate independent health and food safety consultant.
Nikki Wetherall, Founder and Director of Safety has always been a food lover who only ever considered becoming a Chef as a career choice. She also loved to travel, and after qualifying as a chef at Thames Valley University, she decided to explore the world to gain international expertise in her chosen field.
Following over a decade of travelling and working internationally in restaurants, cafes and bars, Nikki was appointed Executive Head Chef of a prominent Sydney caterer. In late 2000 Nikki retuned to the UK and soon after joined BaxterStorey as Head Chef of a high-profile client location.
After achieving excellence in all aspects of health and food safety in her restaurant, Nikki soon recognised her passion for health and food safety and pursued a career as a key member of the WSH safety team
Soon encouraged by her success, Nikki went on to gain her MSc in food safety and was promoted to Head of Safety for the restaurant arm of the WSH Estate. Over a number of years Nikki worked closely with some of the UK’s most well-known and respected Chefs including, Mark Hix and his estate, Monica Galetti at Mere, John Campbell at the 1-star Micheline Woodspeen and the Clockspire. During Nikki’s tenure, all restaurants achieved a food hygiene score of 5 stars and the establishments continue to work to the 5* standards while serving innovative dishes.
Nikki’s key drivers and goals are to enable Chefs to cook, serve and experiment with exciting dishes that may not be considered safe by their local authorities. Thus, in 2017, she launched Five Star Compliance to help restaurateurs reach their ambitions.
To date, Five Star Compliance has worked with many independent Chef Patrons, Event Management Business and has supported new restaurant openings that can all boast being awarded a 5* food hygiene rating.
Nikki's love of cooking strongly remains, and she spends as much of her spare time cooking as she can – but these days it’s purely for pleasure and her love of sourdough.
